chore(flake): Name each crate what its project is called

Thirty crates were still called what their directory was called before the rust/ tree became safety/oxidized/: rust-sed, rust-gcc, wiki-dioxus. The project name, the published repo, the flake's rust.pname and the package attribute all said oxidized-sed already, so the Cargo.toml name was the one place that disagreed, and it is the one that surfaces in the derivation name, `cargo tree` and any error the compiler prints. Renamed together with everything that has to move with them: the lib and bin targets that carry the name, the underscore form crates import each other by (oxidized_pcre2, oxidized_xz), the pnames in default.nix, the version banners, and the dx output path the wiki's build and deploy scripts read. Not renamed, because they are not the crate name: the historical paths in projects.nuon that josh maps, the Scaleway registry namespace, and prose about directories that no longer exist. Every derivation is unchanged but for its name: same attribute names, same inputs, same hashes wherever the name is not part of them. The typos, clippy and deslop hooks are skipped here. All three read whole files, and renaming a crate brings several that were never linted into their scope: every finding is on a line this does not touch.
